I am now never able to order falafel in a restaurant. These are SO GOOD. A little bit of work with the frying, but overall this recipe is pretty simple. You can skip chopping herbs and scallions and garlic if you want to save time since it all goes in the food processor anyway. Soaking the chickpeas overnight is key, but then you don’t need flour or egg as a binder - stays gluten free and vegan!
