I did change the recipe to ~55% whole wheat but kept the 70% hydration. The crust was a little hard and I didn't get as much of a rise as desired but that could be because of the change in flour type but not hydration level. People were very pleased!

I expect you need to increase the hydration level in proportion as the additional whole-wheat flour needs extra hydration
