I started following this recipe and I ended up adding some stuff that needed using in my fridge, including tomatoes, mango, pepper and some courgette, substituting the frozen vegetables. The sauces worked together beautifully and it was nice. The recipe does not mention when to add the ginger so I just added it with the garlic. I also cooked the quinoa with a vegetable broth cube for some extra flavour. Overall, liked it!
