very simple, always delicious. I add shiitake mushrooms for extra texture / flavor, and a lot more kale since it cooks down. usually, I cook the bacon in the pan and use some (not all) of the fat to cook the kale and mushrooms for more flavor. and this food blog has many variations of this hash with sweet potato, sausage, etc if you're looking to try something that isn't quite this. also saves well in the fridge.
