Tasty indeed! Would suggest for the pesto to serve 3 or 4:
50 - 60 g parmesan
(at least) 60 g spinach
4 Tbsp mint
~40 g pine nuts
4 - 6 Tbsp good Olive oil
Zest and juice of 1 large lemon
Large pinch of salt and good grind of pepper
Roughly mix with al dente linguine and top with more olive oil, Parmesan and pepper
