Lots of great flavors. I screwed up the measurements on the spices but it still turned out great. Super easy to make. I mixed the mild Monterey jack with a spicy ghost pepper for a bit of a kick. Delish! I served it with diced tomato, chopped green onion & cilantro, & a dollop of sour cream (crema would be nice, too).
