I had to add a splash of water while I was infusing the spices. I didn't have vegetable broth so I put a can of diced tomatoes in the 4cup measure and filled the rest with water. Looking back I think I could have used Rotel if I wanted heat. I chickened out of putting in the potato and put in culliflower instead. I didn't have spinach so I used kale. I didn't have coconut milk so I used plain coconut yogurt.
It had a nice rich flavor, sweet and juicy but very friendly to little ones since there was no cayanne.
