Yum yum yum. I will be making this again.
Easy, lots of flavor and refreshing. I really liked the bright notes that the cucumber brought to the dish. The peanut flavor can be heavy but the cucumber really lightened it up. It was really good and fairly quick to make.
Made some slight changes:
1) used toasted sesame seed oil
2) no Siracha in the sauce (left it out so it could be added to taste per bowl made).
3) Since I made half the recipe, I only tossed the cooked noodles in one TBSP of toasted sesame seed oil
