It uses dried chickpeas. They are available in some grocery stores depending on your location. It would be near beans and rice. Or you can find it in organic food stores.

You use soaked dried chickpeas. This is the best recipe we've ever tried. Canned usually means we have to add flour or something.

Soak dry chickpeas in water overnight.

The dried chickpeas are soaked in water, which softens them. If you use cooked or canned chickpeas, they're more likely to fall aport when you go to cook falafel. Please read the recipe thoroughly, especially the recipe author's blog post about this recipe, to get a better understanding.

Follow the recipe!! Believe me, I felt the same way before making them, but these have been my favorite falafel ever since I made them!
