Did you finish it off in the oven as per the recipe? I'm wondering what that adds (other than increased electricity /gas) and whether it would be just as good all cooked on the stove top. I love the sound of your addition of some fried curry leaves 😋

I did finish in the oven. It charred the eggplant up a bit more which was nice. If I were to make it on the stovetop I’d give the eggplant some additional dry fry time at the beginning.
