Modified recipe from sweet dumpling + CS
Added buttermilk & minced garlic to carrots & chilled for ~1h
Modified to fit 18.5inch pan
Reduced sugar to around 125g with a mix of white, dark brown, coconut sugar and monk fruit
Reduced oil to around 180g
Added more cinnamon
Mix walnut with pecans
Reduced butter to around 75g
Reduced powdered sugar to 30g
Couldn't get to ribbon state when mixing, hard to mix for more than 15m.
Baked for 1h 20m, turned to upper heat for last 5m and burnt. Underbaked at the bottom.
Tested with chopstick and came up clean at the bottom.
Result:
Very delicious, not overly sweet, could be less dense and more fluffy.
