Delicious! I loved the capers in this. I didn't think I liked them in general -- but I was wrong! They bring a saltiness and flavor that was perfect.
Only change was I didn't cook the artichokes directly in the pan. I find cooked marinated artichokes turn out too tough and can be unpleasant. Instead I lightly sauted the dried onions & capers, added the chicken back in, and then put all the preserved goodness (artichokes, sun-dried tomatoes, capers) sitting ON TOP of the chicken. I ended up putting the lid on to trap the heat in. While it may have loss a tad of the crispness, it worked great! Food was delicious, artichokes and tomatoes were not over cooked / chewy. Definitely a winner.
Next time I would serve with pita and Greek yogurt. My side dishes were overkill because this was definitely a full meal.
