Mediterranean Chicken with Sun-Dried Tomatoes, Artichokes, and Capers

Too oily

I am going to lessen sun dried tomatoes next time but was delicious we didn't even use pasta as we had so much of the tomatoes, capers, and artichokes.

Loved this! I cooked the chicken separately in an air fryer. Veggies were ready in just 5 mins. Definitely a new fave.

I added onions, garlic and fresh parsley as others had said it was bland. I used marinated artichokes (drained) which overwhelmed the other tastes. Would probably be better with frozen ones.

Add fresh Rosemary, Oregano and Parsley

Add Mediterranean herbs, rosemary & oregano, thyme. Parsley, Fresh is best.

Excellent. Wonderful blend of flavors. If using sun dried tomatoes that are NOT in oil, definitely add 1 T olive oil to your pan when lightly sautéing the vegetables.

Very nice, left out the artichokes as not very keen on them

I left it the artichokes because we're not fans of them. But left everything else the same. I was surprised at how FLAVORFUL it all was with so little seasoning. But it was really good!

Oh... my ...goodness!! So delicious! Followed recipe exactly. Paired with another Whisk recipe of sun-dried tomato pasta. Hubby exclaimed 100% high-end plate from a top-notch restaurant.

If I do this again I'll want to add fresh tomatoes and no capers instead

Quick and easy and very flavorful. Serve with wild rice.

Recipe was easy to do. We added broccoli for and extra vegetable.

Used drumsticks and cooked in oven 190 deg for 40 mins and 210 deg for 20 mins. Side of veg and fried cauliflower rice. Fussy partner loved it.

Delicious! I loved the capers in this. I didn't think I liked them in general -- but I was wrong! They bring a saltiness and flavor that was perfect. Only change was I didn't cook the artichokes directly in the pan. I find cooked marinated artichokes turn out too tough and can be unpleasant. Instead I lightly sauted the dried onions & capers, added the chicken back in, and then put all the preserved goodness (artichokes, sun-dried tomatoes, capers) sitting ON TOP of the chicken. I ended up putting the lid on to trap the heat in. While it may have loss a tad of the crispness, it worked great! Food was delicious, artichokes and tomatoes were not over cooked / chewy. Definitely a winner. Next time I would serve with pita and Greek yogurt. My side dishes were overkill because this was definitely a full meal.

My husband liked it but didn't like the sun dried tomatoes.

We all loved it and I will make it again! I may have to cook more chicken as there were no seconds or leftovers😢 I served it with mashed potatoes prepared in the insta pot!

Super juicy and moist. This chicken is so packed with flavour. It is a very low stress meal to make and it only took about 45 minutes to make. My kids loved the chicken itself (not fans of the tomatoes or artichokes but what're you gonna do?).

Nice but chicken a bit bland. Added olives and pasta.

Didn't slice the chicken so it took longer to cook, but moist and flavorful.

Added some turmeric for seasoning. Tastes great

Very good recipe. Followed instructions exactly and was very pleased. Chicken was moist and the artichokes, capers, sundried tomatoes, and lemon juice made for a zesty main dish that easily served 3. Will definitely make again.

It was good, but next time I will be sure to use roasted artichokes and not canned.

This was delicious! I tossed cheese ravioli in the veggies which was a light sauce and the perfect addition to complete this meal.
