I frizzle shallots in the chili oil for a little crunchy topping, sometimes toasted coconut as well if I'm feeling fancy

That's a great idea! I'm not a fan of shredded coconut, but shallots sound good. I was thinking tortilla strips or something but I feel like that doesn't match the dish, as dumb as that sounds lol
