Makes leftovers
This was interesting. I will probably make it again with modifications & also the fact that I have done it once should help next time. Pros: It had an interesting flavor and everyone ate it without complaint. Cons: It was more soggy than I was expecting, but that may be due to my own mess ups. This was not easy, it was time consuming, and with the amount of work it will be made only once in a great while.

After slicing up the aubergine lightly salt them and let them sit for half hour then press water out with paper towels before using in recipe which will help the sogginess of the recipe. 🍷
