This was so good! And easy to make! I used rice noodles but in the future I want to try a different kind. I also didn't have Korean soybean paste, so I subbed white miso since I had it on hand, and it still tasted good. Rather than Sriracha, I used gochujang and garlic chili sauce. Very tasty! Would also be good adding mushrooms or meat to it if you want (I made it with the listed veg this time!). Not super filling by itself, but would make a good side or might fare better as a main with protein added.
