Made quite a few changes, but we weren't trying to go keto:
1) half the peanut butter
2) 2 tbsp rice vinegar
3) 2 tbsp mirin
4) 1 tsp sesame oil
5) 1 sweet onion and 1 head of cauliflower roughly chopped and oven roasted with olive oil before adding at the end
6) added the sauce to the chicken when it was half cooked and finished cooking it in the sauce
7) served over white rice with scallions, peanuts, and sesame seed garnish
Absolutely delicious, even my brother in law who doesn't like Thai food cleaned his bowl.
