This is okay, but will try some tweaks next time. 1) Too many onions. Only used one, and it was still too much. Would also dice the onions and cook them longer. Maybe use a shallot instead. Or onion powder. 2) Sun dried tomatoes would taste good in this recipe. 3) I realize this is meant to be a vegetarian dish. Another reviewer mentioned adding bacon, which seems like it would add some much needed flavor. 4) Too much pasta. I used a whole box (12 oz), since the recipe calls for 14 oz. Next time I’ll only use half a box, as 6-8 oz would be plenty. 5) Although the recipe called for cream, I had to make due with 2% milk. I tried to add flavor/body to the milk with a tablespoon of butter and a half a tablespoon of cornstarch. Heavy cream or half and half would have been better. 6) I also used reduced sodium chicken stock.
