I always have a can of tomatoes in the pantry, so this is a good default midweek meal. really adapt to your taste - I'll add chili flakes and my secret ingredient is a few shakes of fish sauce - its like anchovies! the butter is important, it mellows out the acidity of the tomatoes. can make enough for a pound of pasta. you can add it to ground meat (i use impossible meat) or have it plain. Simple, classic sauce.
