A few notes:
1) I peeled the potatos, wrapped them in tin foil and baked them at 400 for 40 mins or until soft, then cut into chunks
2) I added a dash of paprika and red chili flakes and seasoned it well with slat and pepper, used lots of garlic fresh and powdered
3) didn't use low fat milk just 2%
4) used a quality old cheddar and just regular cheddar too
5) saved some sour cream to garnish on top!
