Those wider noodles could be “belt noodles” or “Biang Biang noodles”. I’m assuming the author simply wrote “noodles” because you can use just about any Asian noodle for this sauce, however, if you want to use a good, chewy, elastic noodle, you could try “hand cut noodles” or the ones I mentioned above. I have a recipe for Biang Biang noodles (if you’re interested) because you will rarely find them sold in markets. (They’re best when freshly made and torn)
