I used skinless boneless chicken breast. Jumped to a different recipe, so I ended up searing 2 minutes per side and baking at 400 degrees for 20 minutes. I reduced the recipe down to 3 servings, 1 and a half servings each for my old man and myself. I removed the onions but added onion powder, doubled the garlic cause we love garlic, ignored the peppers cause I'm allergic, and we didn't hunt down the Kalamata olives cause he remembered I apparently don't like them. I bought lemon peel and used a tiny splash of lemon juice instead of zesting a lemon and squeezing it for juice. And my old man and I both really like it. I read some complaints about the cauliflower rice bit to me it's the same consistency as rice. I bought mine frozen called rice cauliflower from Green Giant, and it didn't leave the freezer until I gathered up the ingredients to make the dish. There was no extra water or weird consistency to me. Definitely will make this again.
