To add on to this, the cooking time stated in the recipe may be a bit too short. When cooked long enough at a lower temp, pork belly will be very tender. It can depend on the thickness of the cut, as thick cuts can be quite tough until cooked long enough. A slow cooker may work well, but I haven’t tried this kind of dish that way yet.
