Used the ingredients for inspiration but went rogue on the instructions. Cooked the bacon in the air fryer (you want it nice & crispy). Also roasted the potatoes and onions in the air fryer. Wilted the kale a bit on the stove. Whisked eggs, salt, pepper, garlic powder, and half & half together in a bowl. Stirred in the bacon, veggies, and some mozzarella cheese. Poured into a 13x9 pan and baked at 350 for 15-20 mins. Turned out delicious and the leftovers will make fantastic breakfasts for the week!
