Love this meal (I used mini zucchini’s for my 1 year old in the pic). I cook the zucchini first, fill with the couscous and then add a fresh tomato bruschetta overtop (I don’t cook the tomatoes). I usually leave the cheese out because it doesn’t need it; however you could sprinkle the cheese over the couscous once you fill the zucchini and melt it in the oven for a few minutes and then add the fresh bruschetta.
