This was so easy and so good! I ended up making a few modifications based on what I had - half a block of Neufchâtel cream cheese, and I added an extra can of diced tomatoes with green chiles plus 2 Roma tomatoes I had that needed to be used. I kind of wish I had tossed in some bell peppers too, I will do that next time, as well as maybe add some spinach! My green onions looked a bit funky so I used some chives instead for the color at the end. I “might” also double the spices next time. Quadruple the cayenne if you like it spicy (I do!!!). All in all, this is a very yummy dish and I will be making it again!
