I changed this recipe a little but I think it probably made it better. I used red and white quinoa although that didn't change it much. The biggest change was that I didn't blend the green onion, cilantro etc. I cooked the chicken, added the green peppers then I added the onion and finally the cilantro for a second. The lime helped bring a zing. I didn't mix it all up together and served the quinoa seperately so it wasn't a big mess. It tasted quite nice but I'd probably swap the quinoa for wholemeal rice as I prefer it.
