Sharing my notes for when I make this again. I did not make it all in one pot. I cooked the rice in a rice cooker and steamed a head of broccoli separately. I cooked the onion and chicken together, added the cooked rice and steamed broccoli, 1 c. chicken broth, 1/2 c. half and half (only because I didn't have heavy cream), and 3/4 c. grated parmesan. I'm a big believer in seasoning as you go and add salt and pepper to taste. My family liked it and I'll make it again.
