No Bacon.
Cut bacon into 1” pieces and fry in heavy pan until it turns brown. Add onions garlic, celery and cook until onions are translucent, add thyme and cook for 2 more minutes . Deglaze pan with some of the Chicken Broth and add to slow cooker.
(Cook HamHock in InstaPot HP for 10 min and add to slow cooker) Add rest of the ingredients & 2 Cups collard greens, 1 link Jalapeño Cheese sausage, 1 seedless Jalapeño, rest of the chicken Broth (8 cups total) Slow cook on high for 2 hrs
