I made this with frozen haddock and had to omit the coriander as I didn't have any. I added an extra spoon of red thai chilli paste and just used the top cream off one tin of coconut milk. I then used the watery part to boil my rice in which was lovely. I added frozen peas in for the last five minutes and some cherry tomatoes on the vine on top to roast for ten minutes too. Very tasty considering the tiny amount of ingredients and even my 3 year old loved it too. Cheap and cheerful, will definitely make again.
