I chose this one because it didn't involve the blender and let me keep my oats whole, which I wanted for a more textural appeal. I made the recipe as is and found it a little flat to my liking. The batter was also a little on the loose side, which is more than likely because I used sprouted oats vs old fashioned. Overall, it was a very good canvas, but I was more happy with my final end product.
I'm sure there are others out there, but as I already had the batter made up, here are my changes:
Use oat milk
Add an additional 1/3 cup of flour
Add 1 teaspoon of vanilla
Use 2 tablespoons brown sugar in lieu of the white
MORE CINNAMON
Add walnuts or pecans
