This was very tasty. I added an eggplant, a zucchini, an onion and a red bell pepper, all diced small and also increased the garlic. Deglazed the pan with a bit of beef broth and thickened it with flour. Simmered the meat in the oven till tender and added a splash of red wine vinegar before assembling. Baked covered for half an hour and uncovered for 15 mins then crisped the top under the broiler. Served topped with a sprinkle of herb and garlic soft cheese and it was delicious!
