I enjoyed this a lot! I did follow other advice to add less coconut milk, and I'm glad I did that. I only had dried lemongrass and that didn't give the kick I was looking for so use fresh next time. I added some agave shiracha at serving and it was great! I also used Hoison since I didn't have sugar on hand. I will also saute the mushrooms with the aromatics as they were a tad bland. With a few tweaks, it will be perfect for us!
