Super easy and comes together quick. I sliced some chicken breast in half and used a meat mallet to get it thin, then sprayed each cutlet with some EVOO spray and baked at 425 for 15-20 minutes flipping halfway through. I skipped the parsley on this because I didn’t have any on hand. Served with lemon wedges to squeeze on top, roasted potatoes and green beans. My kids ate it up!
