Really nice!
I used Edamame Slendier Fettucine for a lower carb option and added a heaped teaspoon of Dijon Mustard for flavour (as I saw notes from others suggesting it was light in flavour).
Didn't have much spinach 🌱so added a generous handful of fresh green beans and 1/2 a zucchini🥒, diced (pre cooked for 4 mins in microwave).
Had to cook the Mushrooms a few mins longer than suggested (that could have been my pan though as it's often slow to heat) and couldn't see in the instructions where to add the paprika, so just added to the Mushrooms with the tamari. Also added all the stock as the instructions said a splash but I felt as though it needed more to make a sauce. It was very saucy (thin though) and didn't reduce so I'd probably add a splash of cream next time.
I don't like pine nuts so served with toasted flaked almonds and a sprinkle of parmesan instead.
