I made this but instead of boiling the peppers/capsicums I just added the mince (to which I added mushrooms, garlic, onion, some beef roast seasoning and a tomato pasta sauce) into the capsicums and then put in the oven for 190 C/375 F until cooked. We used 4 capsicums of various sizes so there was left over of the rice mince mix for 4 addition capsicums for another date.
