I was really surprised that the sweet potatoes got cooked all the way through as they seemed tough throughout the process but everything came out perfectly. My 5 year old son really liked it as well but didn't wat to try "that green stuff". The only thing I changed was using chicken tortellini instead of cheese just to add a little protein. As I'm eating it, I feel like it needs some kind of crunch factor. Maybe toasted walnuts or something similar.
