One-Pot Tortellini with Sweet Potato and Kale

Ingredients

3 tablespoonsavocado oil
3cloves garlic
finely chopped
⅓ cuponion
finely chopped
1 tablespoonrosemary
chopped
1sweet potatoes

chopped, rinsed
1 x 10 ozcheese tortellini
refrigerated
½ cupvegetable broth
1 ½ cupsheavy cream
½ teaspoonsea salt
¼ teaspoonblack ground pepper
⅔ cupparmesan cheese

Instructions
Step 1
In a large saucepan over medium heat, or using your Instant Pot® sauté function, heat avocado oil. Cook garlic, onion and rosemary, stirring frequently, 1 to 2 minutes.
Step 2
Add sweet potato; continue cooking, stirring occasionally 4 to 6 minutes.
Step 3
Add kale; continue cooking 2 minutes.
Step 4
Mix in tortellini, vegetable broth, heavy cream, sea salt and black pepper. Continue cooking, stirring occasionally, until pasta is al dente. Top with ⅓ cup parmesan cheese.
Step 5
Serve with remaining cheese on side.
