So quick , easy and tasty! I used a store bought refrigerated pesto (from Costco), adding a splash of lemon to it. It also allowed me to get rid of a bunch of cherry tomatoes that were past their “good for salad” prime 😊 Don’t skip on walnuts (I think, pine nuts or chopped almonds will work to)- it adds a nice crunch.

Costco pesto is underrated! What did you serve this with? I also have some wrinkly cherry tomatoes…

@Dana - I served it with white rice (frozen jasmine rice from Trader Joe’s, I’m a very lazy person sometimes 😉) and some toss salad. And yep, Costco’s pesto turned out to be a very nice find!
