Word to the wise: it’s a little heavy on the oil side, if you’re not used to that. I only used 1.25 lb of chicken and that was more than enough to balance out the amount of vegetables called for. If you want to add 2 lbs of chicken, I recommend adding more vegetables. Also, I used a standard sized bag of steamed microwaved broccoli as a substitute for fresh, and I recommend nuking it about 60-90 seconds less than usual at the start of your prep so when you add it towards the end, it needs just enough cooking left and isn’t too hot. I had a hard time seeing in the directions where to add the pesto-its at the very end when you combine the chicken back into the pan. I appreciate how the recipe called for full use of the standard size of packaged ingredients (cherry tomatoes usually come in 10 oz containers, etc). As someone returning to cooking after some time, it took me 37 minutes to cook after I had assembled all my ingredients and needed cookware. Solid recipe to return to if you are doing a low glycemic index diet.
