This is a great recipe, tasty filling pancakes that are more ish. A few tips, it does make a big batch of pancake batter so I’m storing the excess in jars in the fridge. You can add your own toppings if you don’t like tofu. I stuck to the recipe and the tofu topping has way too much garam masala, it becomes the dominant flavour so I would halve the garam masala in the recipe or you could even replace it with your preferred spice/herb.
The best part is the pancake itself, easy to make in a non stick frying pan, light and fluffy and already packed with spinach! If you don’t want to grind the oats to make the flour, Tesco sell oat flour and I used 200 grams which worked out fine.
