This turned out really well. We used cod instead of the Mahi but it had the same effect. We did a few things a little differently though. We boiled the coliflower rice and then let it drain before putting it in the bowls. We also steamed the cabbage with some sesame oil and shaved carrots with salt and pepper. This made all of the textures come together a bit better. With those adjustments it came out really nice especially for my kids because they could pick and choose what they wanted in the bowls.
