I found the instructions a bit vague and my first tray came out too salty and a bit burnt, so for my next tray (which was delicious!): 1) I didn't soak the rice paper nearly as long, just dipped it right in and out of the water real quick. 2) I only dipped one side of it in the sauce and definitely scraped off the excess. 3) I turned the oven to convection mode and took them out right at 8 minutes. This worked great for getting them crisp but avoiding a burnt taste.
