I loved this recipe! Definitely went off the rails a little bit, but my stew turned out to be a more Mexican-styled take on the original recipe.
I did the following different than what the recipe called for:
Substituted white onion for red onion
Substituted drained canned corn for celery
Substituted chicken broth for chicken stock
Substituted golden potatoes for sweet potatoes
