So, I wasn't quite smart and forgot to add the parmesan before baking, so this may affect my opinion and I'll give it another shot but - I feel like the amount of mayo could be reduced by a lot. I cooked a single 6oz filet and used maybe a tablespoon worth on both sides. I also dashed some citrus salt, red pepper flakes, and just a smidge of rosemary on the filets before topping with the lemon. I baked up some brussel sprouts to go with the meal and just added the salmon onto the pan for the last 15 mins of cook time (at 400!). It's so easy to make that I'll give it another shot for sure. It was still tasty and worth the minimal effort to prepare.
