Reduced canned chilis to 2. Added 3 Jalapeños and 2 Serrano peppers. Also added 1tbs chili powder, 1/2 tbs paprika, and 1 tsp cumin to chicken. Used 2 chicken breasts from rotisserie chicken from Sam's. Added 1/2 tbs chili powder to cheese sauce.
This recipe yielded 26 enchiladas for me.
