Love this recipe. Tips:.
1. It takes longer for the sugar to caramelize than the recipe says.. just wait for it to be the right color. I didn't let mine go for long enough but better to be a little light than burned. 2. Use a wet brush on the sides after you put the sugar on heat to keep it from crystalizing 3. Using a blender added to much air for me the first time I made this. It tasted great but looked bad. This time I used just a whisk and it was literally perfect 4. I added strawberries to the caramel and it was delicious, everyone loved it
Based on my observations, the stirring method is faster but you end up with a much darker caramel. Some people prefer that but I like a lighter caramel and prefer the leave it method, even though it's harder. It's much easier to end up with crystalization and you have to get the sugar to just the right temp, so you need to get the heat right or you'll wait forever like me lol.
