This had great flavour and some nice heat. Lots of veggies, which made it a wonderful one-dish side dish. I used red peppers as we don’t typically eat green peppers, omitted the peas (not my fav), and garam masala as that is what I had on my spice rack. I did add raw cashews with the onions, which gave it some added depth, and served it with salmon as we are not vegetarian, the mild, creamy salmon flavour a great counterpoint to the boldness of the pulao. The reason I indicated ‘for special occasions’ is because of the prep work. This would not be a dish for a week night for us, but will definitely keep it for weekends when I have a bit more time.
Edit - if you are so inclined, this dish pairs really well with a buttery Chardonnay. 😁
