I found there to be nothing wrong with this recipe, but I'll admit the dish in general is not one of my go-tos, I just had the ingredients on hand. But I did add a few more spices to it, to make a little deeper. I think if you made this you could tailor it to most any type of cuisine (Mexican, Mediterranean, american). I used all the ingredients here, and just added a little tomato paste and za'atar, and topped with greek yogurt instead of cheese. Have fun with it, its pretty bulletproof!
