06/2023 I let the dough rise as stated in the recipe then moved to the fridge as mentioned in the tips. After about 12 hours I set the bowl on the counter for probably 4 hours. The bread baked up perfectly in my Dutch oven.
09/2023 I wanted crusty bread to go with a stew I made so I tried the quicker version, letting it rise for 3 hours then shaping and baking. I mixed in chopped fresh rosemary in the mixing step as well. Excellent for a quick rise. Not quite as light and fluffy, but the hardy chewiness was what I wanted for stew.
